Cozy Spring Day + Strawberry Pound Cake

Hello friends, welcome to another silent vlog. Today is my day off, which means another ME-TIME day. I made a healthy yummy eggs sandwich for breakfast. And then spend most of the day in my reading nook reading books. I’m currently reading Once Upon A Broken Heart book series. I really love it. It’s a fantasy book and very interesting to read. Then, I bake a strawberry pound cake. It was my first time baking strawberry pound cake and I love how it turned out. It was really delicious. I appreciate my alone time so much. It was a much needed for me to recharge from a busy week and finally have time to rest and relax.

STRAWBERRY POUND CAKE RECIPE

Ingredients:

Fresh Strawberries
5 eggs
1tsp lemon juice
3 cups all purpose flour
1/2 tsp baking soda
3 cups granulated sugar
1 tsp salt
2 tsp vanilla extract
1 cup unsalted butter
1 cup buttermilk
white chocolates for glaze

Instructions:

1. Cream together butter and sugar until light fluffy.
2. Beat in eggs, oe at a time.
3. In a separate bowl, whisk together, flour, baking powder and salt.
4. Gradually add the flour nixture to the butter mixture alternately with buttermilk.
5. Stir in vanilla extracts.
6: Gently fold in finely chopped strawberries.
7. pour batter into a greased pan. Smooth the top.
8. Bake at 175’c until toothpick inserted comes out clean.
9. Let cool in the pan and then invert onto a wire rack to cool completely.
10. Melt the white chocolaes and pour on the cake.
11. Decorate the cake with strawberries.
